After listening to the owner of Xin He Chun Soy Sauce – Zhang, You Sheng’s soy sauce brewing techniques and experience, we asked him some questions. The content is as follows:

1. Hello, boss. We’d like to know how many employees you’ve got in the factory?
3, me included. At my great grandfather’s era, the manpower was more abundant, aggregating 20 employees.

2. We’re wondering what the sales channels are for your soy sauce?
In the early stage, because of the inconvenient transportation, we sell our products in the factory. Now, since the transportation becomes more convenient, home deliver thrives, so we deliver our products to the customers’ home.

3. We’d also like to know if you have encountered any difficulty? If so, how did you solve the problems?
No one passes on this traditional industry so it will go extinct someday. We want to carry on this technic and traditional taste, so we appreciate the customers and the media’s help to promote for us.

4. This is an alleged century-old factory. Could we ask if you have any paper to prove it?
This is a copy of our factory investigation report. It recorded production reports during Japanese ruled period. Xin He Chun Soy Sauce Factory established on December 15th, the 10th year of Taisho Era, and this report can prove it. In the earlier stage, we produced not only soy sauce but also pickled cucumber in soy, and therefore, we are also called soy sauce and pickle factory.

5. Could you tell us why there are three addresses under the factory?
Because our address, on the same spot, has undergone three changes. The first reads No.313, Shetou Yiqian, Yuanlin County. Yiqian stands for the place in front of train station. Then, it becomes No.39, Yiqian, Changhua County. And the third address, which is our address for the time being, is No. 592, Sec.1, Shedou Rd., Guang Xin Village, Shetow Township, Changhua County.

6. Could you please address the function of this old price list?
This is the price list used during Japanese ruled period. Because of war, prices fluctuated acutely, and this list marked the public prices of soy sauce, picked cucumber and wheat clearly, which helped stabilized commodities prices.
